Lemon chicken with spaghetti - makes 4
4 chicken breasts
4 lemons (approx)
Fresh or dried oregano
Salt and pepper
Spaghetti - or sub with rice
Olive oil
Fresh oregano
Juice and zest of one lemon
Salt and pepper
1. Cut open the chicken breasts (but not all the way through), and fill the cuts with salt, pepper, oregano and some small slices of fresh lemon.
2. Cut 8 very chunky slices of lemon, and 'sandwich' the chicken between two slice of lemon for each piece of chicken.
3. Heat a frying pan or griddle and place the chicken in it, cooking for about 12-17 minutes, turning every few minutes. Ensure the lemon remains in contact with the chicken for the duration of cooking. You don't need oil as it cooks in the lemon and chicken juices.
4. Prepare the spaghetti as per the instructions on the pack. Mix up with all the spaghetti ingredients.
5. Serve the chicken and spaghetti together with the lemon slices you used to cook them with.I need HEALTHY and GOOD TASTING food recipes?
