Most authentic Chinese dishes are actually quite low in fat, and this article states some differences between authentic and westernized Chinese food: http://www.romow.com/culture-blog/americanized-vs-authentic-chinese-food/
If you're a seafood lover, try steamed fish or scallops on the half shell, they are usually spiced up with shredded gingers, garlic, chilli, spring onion or coriander, with soy sauce. You may try these recipes:

Stirfrys are great to be served with either plain rice or noodles! You can stir fry veggies with or without meat, sliced lean meat, seafood or tofu will be a better option if you're concerned about the fat content.
With a good quality non-stick pan, you only need a small amount of oil to sautee (minced ginger, garlic, chili, or spring onions), add the marinated meat and then veggies. Stir fry for 1- 2 minutes and then cover. If you prefer a thicker sauce, a mixture of ';corn flour %26amp; water'; can be added in when everything is cooked. Turn off the heat when it bubbles. Season with salt or soy.
